Chilli Crab Beehoon Recipe

Woke up hungry... rummaged through my kitchen and found I had some frozen shredded crab claw meat. So I experimented and made Chilli Crab Beehoon.
Just sharing the recipe for those who are interested. It has no measurements, as I tend to just cook based on feel... but Chilli Crab is not a complicated sauce to make.

Best if you have whole crabs, then you can skip the damn beehoon which soaked up all my chilli crab sauce (boo hoo)... but I used beehoon cos I was desperate and hungry. Lol. But tasted good.

First soak the beehoon in a bowl of tap water (about 5-8 minutes). If you are not using bee hoon, obviously, skip this step. If you have fresh whole crabs (yay!)... then sort of half cook them first. I would just put them in a pot of hot water and for a few minutes (maybe 4 mins if your crab has been cut into pieces).

Next you need a diced onion, chopped up garlic, and a bit of oil. Sautee the onion and garlic in a frying pan/wok until onion is translucent. Smells great btw. Once done, add in about 2 tablespoon of chilli paste (I suppose u can grind fresh chillies instead), I also put in about 4 tablespoons of tomato ketchup, beat one egg in, add half a cup of water, a pinch of salt and sprinkle of pepper. If you find it looks watery, taste it and then add ketchup or whatever you feel it needs. But don't worry, the crab will soak up some of the moisture. (or if you're using beehoon... it'll practically parch your pan).

Then I put in my shredded crab mean and beehoon (don't add the water the beehoon's been soaking in!), once cooked.. Add quick squirt of some lemon (I use like a teaspoon of those concentrated lemon juice you find at the supermarket).. and it's done! Without the beehoon... you'd just be adding your chunks of crab in at this point and allow the crabs to simmer in the sauce until fully cooked.

You can also replace the crab with prawns or even softshell crabs but these probably don't need to be half cooked first. Can put in raw into the chilli crab sauce and just wait for it to cook. :)

P/s One of my favourite crab dishes is the proper crab beehoon that I eat at the zhichar stalls. Like this-
But I don't know how to make the broth that colour and so tasty.  :( Anyone knows?

    They use evaporated milk to make tht crab beehoon u like. And thts the secret :)
